What, you don't own a MAC OSX version of Ultima VII?! ...
Any of the PC versions with Forge of Virtue add-on should be OK. Exult just uses the data files from the games.

All Ultimas from Ultima VII onwards were only ever released for the PC.
You can run the PC versions of many Ultimas, including Ultima VII, on the Mac using DOSBox... or of course you can use Exult with the PC Ultima VII data files. The CD-Rom versions are usually the best for this, since they usually include both U7 and SI, as well as the Forge of Virtue and Silver Seed expansions.

The CD Rom filesystem is pretty much universal across all operating systems. Each OS adds its own extensions, and if exact format isn't supported the disk can usually be read using a compatibility fallback.
U7 disks were meant for DOS so they will probably just be standard ISO 9660 that everything supports.
