I take it the GoG release still needs Exult to be played?

No, it's bundled with dosbox and thus can be played. The nice things that exult brings are of ciurse not included ;)

Ugh so you still have to make a custom Autoexec.bat and Config.sys to use the Voodoo Memory Manager to run it??
I remember having a hell of a time trying to run it in DOSBox so I gave up and just went back to Exult cause it actually worked..

No, unless you take the painful way of using Dosbox with boot disk images. For default Dosbox a batch file called run with the following entries is enough

cycles=7000
ems=false
xms=true
ultima7.com
In the case of the GOG bundle, no need for this as it comes with a config file that GOG deems to be the best working one...
